Venison Reuben Sandwiches

My love for reubens is truly a mystery to me. Separate the ingredients and I wouldn’t go near it. Put them together and I can’t get enough. The buttery rye, tangy sauerkraut, crunchy pickles, salty corned venison, and creamy thousand island… my stomach is rumbling just thinking about it! These venison reuben sandwiches are the perfect meal, they have a little bit of everything!

Wesley has perfected the smoked corned venison (I have been the lucky taste tester) and this recipe wouldn’t be the same without it. Brined, smoked and sliced- it makes an amazing sandwich, omlette or snack on its own when you aren’t quite hungry enough for a meal but need a little something to hold you over.

It is easy enough to make for a beginner with a smoker, but if venison isn’t your jam you could certainly use corned beef!

Corned Venison Reuben Sandwiches

Ingredients
  • Rye bread-4 slices
  • Corned Venison, thinly sliced- 2/3 lb
  • Sauerkraut- 1 cup
  • Muenster cheese- 4 slices
  • Pickles
  • Thousand island dressing- 4 tbs (plus more for dipping)
  • Butter
Directions
  • Step 1 While your skillet warms on medium high heat, butter one side of each piece of bread, making sure to get the whole way to the edge. This ensures every bite will be golden brown and toasty!
  • Step 2 Place one piece of bread (butter side down) in your preheated skillet, and start layering your sandwich. Our preferred stack starts with 1 slice of muenster cheese, then corned beef, followed by sauerkraut, thousand island dressing, pickles and the second slice of cheese. Top with the second piece of bread, butter side out.
  • Step 3 Cook for approximately 4 minutes each side, keeping an eye on it to ensure it is getting golden, but not burnt. (do not get distracted as I did on my first sandwich!)
  • Step 4 Using a larger spatula, flip carefully to ensure you don’t lose your fillings! Continue to cook for an additional 4 minutes or so on the second side.
  • Step 5 If desired, slice in half and serve with additional dressing for dipping. Enjoy!
